Beetroot Health Benefits
Did you know that juicing the leaves of the beetroot and stem are more beneficial than eating them just whole?
Most people tend to throw these parts of the plant away;however they are super NUTRITIOUS TO EAT!
- Like spinach, these leaves contain lutein which is very good for improving vision, and maintaining healthy eyes
- Extremely rich in Vitamin K, very important for the body to maintain healthy bone mass
- They also contain valuable amounts of Vitamin A, B7 & C. Protein, Phosphorus, Zinc, Magnesium, Potassium, Copper, Iron and Manganese
- The Vitamin K concentration will also prevent osteoporosis and Alzheimer’s disease
- When harvesting the leaves, they should be crisp and fresh, if they are slimy or wilted then they are no good
- Make sure you wash the leaves and stems well before consuming. You may also store them in an air tight container for 3-5 days in the fridge
- Instead of using them in a juice, I suggest you Sautee them in a frying pan with a little olive oil with some poached eggs on the side as a snack or brekky

Boost Juice
- Carrot
- Beetleaves and stems
- Beetroot
- Celery
- Apple
- Ginger
DIRECTIONS: To make this juice, all you need to do is chop all vegetables and fruit into chunks, enough to fit into your blender. Throw all items into your blender, along with your washed beets stems and leaves, pour into a glass and bon appetite
